How to make it

  • Preheat oven to 350F and lightly oil a baking sheet
  • In a medium bowl, mix flours, cocoa, powder and baking soda
  • In a large bowl, cream the margarine, evaporated cane juice & sugar
  • After creaming, add soy milk and beat again briefly to combine
  • Add dry mixture to wet ingredients then mix till you get a dough
  • Make the peanut butter filling: combine powdered sugar and peanut butter thoroughly with a spoon (may use your hands too)
  • Put in chocolate chips and knead
  • Take about a 1 inch ball of dough and flatten it into a disc on the baking sheet- do this till the baking sheet is full
  • Use around 1/2 tsp of peanut butter filling and place it into the center of each disc
  • Take the edges of the dough and cover the filling, then press the seams together so that no peanut butter sticks out.
  • Turn this around so the seams are facing down on the baking sheet, and flatten slightly
  • Bake for 10-11 minutes
  • Cool for 2 minutes on baking sheet, then transfer to wire rack to cool completely
  • Cookies should be chewy in the center after they are cooled
