Maryland Crab Quiche Recipe
A crab quiche with a little Maryland flavor.

Ingredients
  • 1 prepared pie shell
  • 8 oz lump crab meat
  • 1/8 cup finely chopped sweet onion
  • 1 (10 3/4 oz) can cream of chicken soup
  • 1/2 cup whipping cream
  • 1 cup egg beaters
  • 1 cup grated mild cheddar cheese
  • 1 Tb Old Bay Seasoning

Directions
  1. Preheat oven to 420 F.
  2. Spray a disposible pie plate with PAM with flour. Layer in the prepared pie shell and trim the excess from the rim of the plate.
  3. Bake the pie shell for 10 minutes.
  4. In a medium bowl, mix the chicken soup, whipping cream, and prepared egg mix. In a second bowl, clean the crab meat, removing any shell fragments, then stir in the Old Bay.
  5. When the pie shell begins to crust, remove fromt the oven and add the seasoned crab meat, the onion, and the grated cheddar. Pour the egg/soup mixture over the top.
  6. Reduce the oven temperature to 320 F. Place the quiche in the oven and cook for 50 minutes, or until a fork inserted into the middle of the quiche can be remove cleanly. By this time the surface should be turning brown.
  7. Allow to cool before serving.
