Ingredients

1 large, pre-prepared pizza crust ( I prefer homemade crust that has been grilled. I keep several in the freezer for whenever the pizza mood strikes!)

1/4 cup pesto

1 cup fresh baby spinach

1/4 cup sliced kalamata olives

2 anchovy fillets, chopped

1/4 cup rehydrated sun-dried tomatoes, sliced or 1/3 cup fresh tomatoes, chopped (either is very, very good!)

Sliced red onions to taste

1 cup shredded mozzarella cheese

1/4 cup crumbled feta cheese

1/4 cup crumbled blue cheese

1 tablespoon chopped fresh herbs: basil, rosemary, oregano

1 tablespoon parmesan cheese

1 heaping teaspoon hot pepper flakes

2 things I love about this haiku (and pardon the academic deconstruction): 1) the basic architecture of the words topping the poem with the actual "toppings" above the base of the pizza in line 2 and 2) the one and only noted step being the most important of any meal. If Al Bundy were a haikuist, I could picture him leaning back in his chair loosening his belt and ahhh... (then crack open a cold one).
