Ingredients
  • 6 8oz New York Steaks
  • 2 T. Pepper (coarsley ground)
  • 6 tsp. butter
  • 5 drops tabasco sauce
  • 1 tsp. worchestershire sauce
  • 2 tsp. lemon juice
  • 3 T. cognac
  • chopped parsley

Directions
  1. Sprinkle steaks on both sides with pepper
  2. Work into meat with heel of hand
  3. Let stand 30 minutes
  4. (Lightly) salt bottom of a heavy skillet
  5. Cover, heat on high on (well hooded stove) until salt slightly browns
  6. Put steaks on ( sear first side 30 seconds on high heat)
  7. Turn steaks over ( hood of stove exhaust must be turned on)
  8. Reduce heat to medium
  9. cook one minute ( this is for rare) cook longer if you desire steak more done
  10. place 1 tsp. of butter on each steak, allow to melt
  11. Combine: Lemon juice, Tobasco,Worchestershire, over meat
  12. Turn heat to Low ( Blaze Steaks with Cognac)
  13. Remove Steaks to Platter
  14. After Swirling Sauce in skillet
  15. Pour over Steaks
  16. Sprinkle with Parsley
  17. Enjoy
