Fast Shrimp Curry Recipe
This is a simple dish to make and it is good. Not hot. I don't like all the extras that you can add, but the original recipe had it there so I put it in.

Ingredients
  • 1/4 c Butter
  • 4 c Cooked chicken or shrimp
  • 2 c Milk
  • 2 c Chicken broth
  • 1/4 ts Ginger
  • 1 1/2 ts Sugar
  • 1 1/2 ts Salt
  • 1/4 c Flour
  • 1 tb Curry powder (or more)
  • 1/2 c Minced onion
  • 1/2 c Minced green and red pepper, mixed
  • 1 ts Lemon juice

Directions
  1. Melt butter and sauted onion , green peppers and curry powder in wok.
  2. Blend in flour and seasonings.
  3. Cook over low heat till smooth and bubbly.
  4. Remove from heat.
  5. Stir in broth and milk.
  6. Bring to boil, stirring constantly, and boil 1 minute.
  7. Add chicken or shrimp and lemon juice.
  8. Heat.
  9. Serve over steamed rice.
  10. Relishes: raisins, almonds, peanuts, pineapple chunks, chopped hardboiled eggs, crisp bacon bits, sour/sweet pickles, currant jelly, coconut, chutney, sliced avocado.(optional)

  12. This cooks fast so start your rice first if you are doing regular.

I tried this but, as usual, I didn't have all the ingredients. My version (which my family LOVED) included the shrimp, ginger, cumin, coriander and turmeric (no curry powder), ginger, sugar, butter, flour, milk and vegetable broth. I added a bag of frozen peas to the mixture and then stirred in steamed basmati rice making a sort of thick stew of the whole thing. Great recipe!
