How to make it

  • Start rice - cook according to package directions while sautéing meat & veggies.
  • Separately, spray a large skillet with Pam spray.
  • Over medium heat, saute sausage with onions, peppers and celery until starting to brown.
  • Add tomatoes, garlic and salt if desired.
  • Stir in rice as soon as it is done and simmer a minute.
  • If you like it a little spicy, a quarter or half cup of hot salsa is the perfect seasoning. A little cayenne or red pepper flakes would also do the trick.
  • Serve with salad and bread and dinners done.
