15 Minute Jambalaya Recipe
A hearty filling meal in a hurry. This recipe came from a Reader's Digest magazine I think, many years ago. 15 minutes is assuming you're a pretty quick cook or the vegetables are already cleaned.

Ingredients
  • 1 ring smoked sausage or Kielbasa, cut up. The original recipe calls for cutting into 4" pieces but I prefer bite size slices.
  • 1 green pepper chopped
  • 1 onion diced
  • 1 cup diced celery
  • 2 cups uncooked minute rice, white or brown.
  • 1 large can tomatoes with juice. If using whole tomatoes, break up with fork.
  • garlic to taste, garlic salt, garlic powder, 1 or 2 cloves fresh
  • Salt to taste, omit if using garlic salt
  • A little hot salsa for seasoning if desired

Directions
  1. Start rice - cook according to package directions while sautéing meat & veggies.
  2. Separately, spray a large skillet with Pam spray.
  3. Over medium heat, saute sausage with onions, peppers and celery until starting to brown.
  4. Add tomatoes, garlic and salt if desired.
  5. Stir in rice as soon as it is done and simmer a minute.
  6. If you like it a little spicy, a quarter or half cup of hot salsa is the perfect seasoning. A little cayenne or red pepper flakes would also do the trick.
  7. Serve with salad and bread and dinners done.
