15 Minute Jambalaya

- 1 ring smoked sausage or kielbasa, cut up. The original recipe calls for cutting into 4" pieces but I prefer bite size slices. shopping list
- 1 green pepper chopped shopping list
- 1 onion diced shopping list
- 1 cup diced celery shopping list
- 2 cups uncooked Minute Rice, white or brown. shopping list
- 1 large can tomatoes with juice. If using whole tomatoes, break up with fork. shopping list
- garlic to taste, garlic salt, garlic powder, 1 or 2 cloves fresh shopping list
- salt to taste, omit if using garlic salt shopping list
- A little hot salsa for seasoning if desired shopping list
How to make it
- Start rice - cook according to package directions while sautéing meat & veggies.
- Separately, spray a large skillet with Pam spray.
- Over medium heat, saute sausage with onions, peppers and celery until starting to brown.
- Add tomatoes, garlic and salt if desired.
- Stir in rice as soon as it is done and simmer a minute.
- If you like it a little spicy, a quarter or half cup of hot salsa is the perfect seasoning. A little cayenne or red pepper flakes would also do the trick.
- Serve with salad and bread and dinners done.
