This was a favorite of my mother-in-laws. Now I wonder how she had the time to ever make these for 11 children???

Ingredients
  • 6-8 slices of bacon
  • 1/2 cup shopped onions
  • 1/2 cup chopped green peppers
  • 1/2 cup sliced mushrooms
  • 8 oz. shredded cheddar cheese
  • 1 (8oz) tomato sauce
  • 1/2 cup sour cream
  • crepes to fill

Directions
  1. Fry bacon, drain and crumble into small pieces.
  2. Saute onion and green pepper in 2 Tbsp bacon fat.
  3. Add mushrooms, bacon and 2/3 of the shredded cheese.
  4. Fill each crepe and roll. Place in shallow baking dish.
  5. Top with sauce made by combining the sour cream and tomato sauce.
  6. Cover with the remaining cheese.
  7. Bake at 350 degrees until cheese is melted.
