Cantaloupe Salad With Crispy Prosciutto

- 1 medium cantaloupe, peeled, seeded and cut into sticks shopping list
- 1/2 large english cucumber, peeled, seeded and cut into sticks shopping list
- 3 tbsp port wine shopping list
- 1 tbsp extra virgin olive oil shopping list
- 1½ tsp very finely grated fresh ginger shopping list
- salt shopping list
- 8 slices prosciutto shopping list
How to make it
- Preheat the oven to 400°F
- Place the melon and cucumber sticks in a bowl and add the port, olive oil, ginger and salt.
- Toss to mix and leave to marinate for 1 hour.
- Meanwhile, cook prosciutto slices in oven for 10 minutes, turning once until crisp. Let cool.
- Toss the melon and cucumber just before serving and, using a slotted spoon, divide the mixture between 4 plates.
- Top with 2 slices of crispy prosciutto.
