The melon is marinated, then served with crispy prosciutto slices, which contrast with the soft fruit. A delightful salad dish, hearty enough to serve as a main course!

Ingredients
  • 1 medium cantaloupe, peeled, seeded and cut into sticks
  • 1/2 large English cucumber, peeled, seeded and cut into sticks
  • 3 tbsp port wine
  • 1 tbsp extra virgin olive oil
  • 1½ tsp very finely grated fresh ginger
  • Salt
  • 8 slices prosciutto

Directions
  1. Preheat the oven to 400°F
  2. Place the melon and cucumber sticks in a bowl and add the port, olive oil, ginger and salt.
  3. Toss to mix and leave to marinate for 1 hour.
  4. Meanwhile, cook prosciutto slices in oven for 10 minutes, turning once until crisp. Let cool.
  5. Toss the melon and cucumber just before serving and, using a slotted spoon, divide the mixture between 4 plates.
  6. Top with 2 slices of crispy prosciutto.
