  • Speedy Chicken Enchiladas
  • from Campbell's Kitchen
  • 1 lb. skinless, boneless chicken breast, cubed
  • 1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1 cup Pace® Thick & Chunky Salsa
  • 8 flour tortillas (6-inch)
  • 1 can (10 3/4 oz.) Campbell's® Condensed Cheddar Cheese Soup

  • COOK chicken in nonstick skillet until browned and done, stirring often. Add chicken soup and 1/2 cup salsa. Heat through.
  • SPOON about 1/3 cup chicken mixture down center of each tortilla. Roll up tortilla around filling and place seam-side down in 2-qt. microwave-safe baking dish.
  • MIX cheese soup and remaining salsa and pour over enchiladas. Cover.
  • MICROWAVE on HIGH 5 min. or until hot.

Alterations


I got a similar recipe a long time ago using Campbell's Nacho Cheese Soup which is sometimes hard to find. Perhaps they don't even make anymore, but nonetheless, it's no more than the Cheddar Cheese Soup and salsa. Here's the variation: Preheat oven to 350. Boil the chicken breasts (2-3) and shred (pulled). Mix 3 T. of cheddar cheese soup, 2 T. Salsa and 1/4 cup shredded cheddar with the chicken. Roll and layer as above in a greased baking dish. Mix remaining cheddar cheese soup, 2 T. salsa and 2 T. milk. Pour over tortillas. Top with 1/4 shredded cheddar. Cover with foil and bake 15 mins. Remove foil and bake another 10-15 mins. I know this is good, so I'm sure this easy, speedy recipe is good too. I'm going to remember this when I'm in a rush. Thanks. Peg
