How to make it

  • Melt butter, and stir in flour; cook over low heat, blending until smooth.
  • Stir in salt and pepper.
  • Graducally add broth and milk; cook, stirring constantly, until smooth and thickened.
  • Add cheese; simmer about 10 minutes. (Sauce will be thick.)
  • Place 2 slices toast on each of 6 overproof plates.
  • Place turkey or chicken on each slice of toast; cover with sauce, and sprinkle with paprika.
  • Top each with 1 slice tomato and 1 slice bacon.
  • Bake at 400 degrees for 10 minutes or until sauce is bubbly.
  • Garnish with parsley.
  • Yield: 6 servings.
