The string hopper , puttu mayam or Idiyappam is made from rice noodles . It is served for breakfast , thou the Malayalee Community eats them for lunch or dinner.. with a thin chicken curry , egg gravy or fresh sweetened milk .

Ingredients
  • Makes 10 .
  • 2 C Rice flour with a pinch of salt
  • Water

Directions
  1. Roast the rice flour .
  2. Grease some heat proof saucers .
  3. Boil some water in a wide bowl .
  4. Once bubbles starts to appear at the bottom of the bowl , add the water bit by bit to the rice flour and mix with a wooden spoon ( careful not to touch the hot water with your bare hands ) until non sticky smooth dough ball forms .
  5. Now force the dough through a mould similar to those used for pasta to make the strings on the grease saucers , curling into flat spirals .
  6. Work on one at a time .
  7. Keep in double boiler and steam until cooked .
  8. May take 2 mins each time .
  9. Serve with Chicken Stew or sweetened milk .

There are many variations to this, depending on the type of flour used . This simple dish can be adapted to more interesting things such as String Hopper Biriyani, by adding scrambled eggs or vegetables
