Mushroom-stuffed Eggs

- 4 teaspoons butter shopping list
- 2 tablespoons chopped spring onion shopping list
- 8oz (240g) mushrooms, finely chopped shopping list
- Pinch each of salt, pepper and thyme shopping list
- 8 hard boiled eggs shopping list
- 8 teaspoons of mayonnaise shopping list
- 3 teaspoons lemon juice shopping list
- parsley to garnish shopping list
How to make it
- Melt butter in none-stick pan, add spring onion ans saute for 2 minutes
- Add mushrooms, salt, pepper and thyme and cook for 3-5 minutes or until all the liquid has evaporated, cool
- Cut each egg in half lengthwise
- Remove the yolks and put aside the whites
- Rub the yolks through a sieve into a bowl
- Add the mushroom mixture, mayonnaise and lemon juice , stir to combine
- Fill each egg white with an equal amount of the mixture and garnish with parsley
