Ingredients
  • 4-1 pound Cornish Hens
  • 1 Package of Stuffing mix with rice
  • 1-1/4 Cups Chicken Broth
  • 2 Eggs,beaten
  • 2 Tablespoon Soy Sauce
  • 1(16oz) Can Mixed Chinese Vegetables,drained
  • 1(8oz) Can Water Chestnuts,drained and sliced
  • 4 Tablespoons Butter,melted
  • 1 teaspoon Paprika
  • 2 Tablespoons Orange Marmalade
  • 2 teaspoons Bottled Steak Sauce

Directions
  1. Prepare the stuffing mix,using the chicken broth,fluff when done.
  2. In a bowl combine eggs,soy and vegetables and water chestnuts.
  3. Add to the stuffing mixture and stir in lightly,but well.
  4. Stuff cornish hens with mixture,combine the butter and paprika and brush over top of hens.
  5. Place in roasting pan,place in 400 degree oven and bake for 45 minutes or until tender.
  6. The last 15 minutes of roasting,combine the the marmalade and steak sauce,spoon over Cornish Hens and continue to roast for those 15 minutes.
  7. Remove from oven and cover loosely with foil and let rest for about 10 minutes.

This is awesome, I happen to have hens in my freezer, taking out to defrost. looking forward to trying this!


Well I made these for lunch and they were amazing. I altered the recipe a bit by using a vegetable rice mix which I added freshly grated ginger, scallions and garlic to. A dash of soy since the rice mix already had a lot of salt and then the last 15 minutes I used HoiSin sauce, ala peking duck. I cant believe how delicious they were!!! Thank you:))
