Tomato And Zucchini Gratin

- 3 lbs. ripe plum tomatoes shopping list
- 3 lbs. firm zucchini shopping list
- 1/2 c. dried bread crumbs or wheat germ shopping list
- 1/4 c. grated parmeson, fontina, cheddar or whatever shopping list
- 2 T. fresh flat leaf parsley shopping list
- 1 T. chopped fresh basil shopping list
- 1 T. chopped fresh oregano shopping list
- salt & freshly ground pepper to taste shopping list
- 1/4 c. pure olive oil shopping list
How to make it
- Preheat oven to 375
- Slice tomatoes & zucchini into 1/4" rounds
- On cookie sheet or ovenproof platter overlap tomato & zucchini in decorative pattern
- Blend bread crumbs or wheat germ, cheese, herbs & salt & pepper together and scatter evenly over veggies.
- Sprinkle olive oil on top & bake until golden & crusty, about 20 minutes.
- Serve and enjoy!
