Tomato And Zucchini Gratin Recipe
This is a great recipe for a vegetarian side dish or in our case, dinner!

Ingredients
  • 3 lbs. ripe plum tomatoes
  • 3 lbs. firm zucchini
  • 1/2 c. dried bread crumbs or wheat germ
  • 1/4 c. grated parmeson, fontina, cheddar or whatever
  • 2 T. fresh flat leaf parsley
  • 1 T. chopped fresh basil
  • 1 T. chopped fresh oregano
  • Salt & freshly ground pepper to taste
  • 1/4 c. pure olive oil

Directions
  1. Preheat oven to 375
  2. Slice tomatoes & zucchini into 1/4" rounds
  3. On cookie sheet or ovenproof platter overlap tomato & zucchini in decorative pattern
  4. Blend bread crumbs or wheat germ, cheese, herbs & salt & pepper together and scatter evenly over veggies.
  5. Sprinkle olive oil on top & bake until golden & crusty, about 20 minutes.
  6. Serve and enjoy!
