Pull Apart or Monkey Coffee Cake
From midgelet 15 years agoIngredients
- 1 pkg active dry yeast shopping list
- 1/4 cup warm water shopping list
- 1/2 tsp salt shopping list
- 1/4 cup sugar shopping list
- 1/4 cup oil shopping list
- 3/4 cup warm milk shopping list
- 1 large egg shopping list
- 3 1/2 cups flour or more as needed shopping list
- 1 cup raisins shopping list
- 1 cup sugar shopping list
- 2 tsp cinnamon shopping list
- 1/2 cup melted butter shopping list
How to make it
- Dissolve yeast in water until foamy.
- Stir in salt, sugar, oil, milk and egg to blend.
- Stir in 3 1/4 cups flour until smooth.
- Knead dough smooth and elastic on floured surface, adding additional flour if needed to prevent stickiness.
- If using a dough hook in mixer, beat high speed about 5 minutes.
- Knead in raisins by hand.
- Divide dough into 3 portions.
- Cut each portion into 16 small pieces.
- Shape pieces into balls.
- Roll dough balls in 1/2 cup melted butter and then in
- the sugar/cinnamon mixture.
- Stagger balls barely touching in a greased and
- floured 9 inch bundt or tube pan.
- Sprinkle on any remaining sugar mixture and drizzle on any remaining melted butter.
- Cover lightly with plastic wrap and let rise puffy in a warm place about 45 minutes to 1 hour.
- Or you can chill the dough and let it rise puffy in the refrigerator about 16 to 18 hours.
- Bake in a preheated 350F oven about 30 minutes or golden and done.
- This particular recipe needs to cool in the pan about 10 minutes before removing so the warmed sugar and butter firms up .
- Carefully run a blade of knife around pan to loosen and
- carefully invert onto serving platter to serve.
- Serve warm.
- Advise guests to pull off pieces.
- Note : for the cake pictured above, I made slices of dough and
- not balls..
- Use portions of dough and roll out as you would for cinnamon rolls:
- roll up jelly roll style and slice off pieces and proceed with the remainder of the recipe.
- I also added a powder sugar icing over the warm cake with some nuts
- for decoration.
- TIP: Make cinnamon rolls/buns into a cake!
- Use your favorite cinnamon bun/roll recipe and when the pieces are cut into individual rolls ( slices ) pile them loosely in a tube pan after they have been dipped in the melted butter& sugar to make the bubble cake.
- Let them rise puffy and bake.
