Ingredients
  • Two Egg Pasta Dough , one of many kinds I make, and some without egg also
  • 2 cups flour
  • 1/4 tsp baking powder ( optional ) add a touch of lightness to dough
  • 2 eggs
  • 1 Tbs olive oil
  • 2 to 4 Tbs water or as needed

Directions
  1. HAND MIXED METHOD
  2. Combine flour( all purpose or semolina ) and (salt)
  3. Make a well in center of flour
  4. Add oil if indicated
  5. Break in egg (s )- all eggs grade A large
  6. Mix in eggs and oil with fork
  7. Add room temperature or warm water gradually
  8. mix with fork to hold dough together or until it clings together
  9. Knead with hands on floured surface until a smooth and pliable consistency is achieved
  10. Cover with inverted warm bowl, damp cloth or wrap in plastic wrap
  11. Let rest room temperature 20 to 30 minutes
  12. Divide the dough into manageable working sections ( cut dough into 4 to 6 equal pieces )
  13. Roll, cut and let air dry a few minutes prior to cooking or let dry completely,
  14. Store and cook at a later date
  15. OR
  16. FOOD PROCESSOR METHOD
  17. Use steel blade
  18. Place in eggs, oil, then flour
  19. Process only seconds or until a cornmeal consistency
  20. Add water and pulse only until dough leaves sides of bowl
  21. Follow remaining procedure as above to prepare and relax dough
