How to make it

  • Combine flour( all purpose or semolina ) and (salt)
  • Make a well in center of flour
  • Add oil if indicated
  • Break in egg (s )- all eggs grade A large
  • Mix in eggs and oil with fork
  • Add room temperature or warm water gradually
  • mix with fork to hold dough together or until it clings together
  • Knead with hands on floured surface until a smooth and pliable consistency is achieved
  • Cover with inverted warm bowl, damp cloth or wrap in plastic wrap
  • Let rest room temperature 20 to 30 minutes
  • Divide the dough into manageable working sections ( cut dough into 4 to 6 equal pieces )
  • Roll, cut and let air dry a few minutes prior to cooking or let dry completely,
  • Store and cook at a later date
  • OR
  • Use steel blade
  • Place in eggs, oil, then flour
  • Process only seconds or until a cornmeal consistency
  • Add water and pulse only until dough leaves sides of bowl
  • Follow remaining procedure as above to prepare and relax dough
