How to make it

  • Sprinkle chicken breasts with salt and pepper
  • Heat oil in a large skillet, lightly brown the chicken on both sides, about 3-5 minutes per side
  • Remove chicken breasts and setaside
  • In the same skillte, saute onions, bell peppers, and garlic, about 5-8 minutes
  • Stir in coconut milk and red pepper flakes
  • Simmer for 5 mintues over a medium heat
  • Return chicken to pan, spoon sauce and vegetables over chicken
  • continue to cook, uncovered, for 20-30 minutes until chicken is cooked through and vegetables are tender
  • Serve over rice, cous cous, or noodles to soak up the sauce
  • Top with crisp shallots, if desired

    Great recipe! I just made it last night, served over Jasmine rice, and enjoyed it very much. I added half the garlic and skipped the hot peppers and shallot, but everything turned out very tasty.
