Coconut Chicken

- 4 boneless skinless chicken breasts shopping list
- salt and pepper shopping list
- 2 tbsp. vegetable oil shopping list
- 1 onion, chopped shopping list
- 1 red bell pepper, chopped shopping list
- 1 green bell pepper, chopped shopping list
- 2 garlic cloves, minced shopping list
- 1 can coconut milk shopping list
- 1/2 tsp. crushed red pepper flakes (add more to spice up the dish) shopping list
How to make it
- Sprinkle chicken breasts with salt and pepper
- Heat oil in a large skillet, lightly brown the chicken on both sides, about 3-5 minutes per side
- Remove chicken breasts and setaside
- In the same skillte, saute onions, bell peppers, and garlic, about 5-8 minutes
- Stir in coconut milk and red pepper flakes
- Simmer for 5 mintues over a medium heat
- Return chicken to pan, spoon sauce and vegetables over chicken
- continue to cook, uncovered, for 20-30 minutes until chicken is cooked through and vegetables are tender
- Serve over rice, cous cous, or noodles to soak up the sauce
- Top with crisp shallots, if desired
