Truley a yummy squash recipe, Looks pretty as well. May be done with asparagus too. Can be made all vegan if desired by using soy based mayo and milk

Ingredients
  • 1 small yellow squash
  • 1 small green squash
  • 4 small garlic cloves minced
  • 1 Tbs olive oil
  • 1/2 cup Vegannaise or real Mayonaisse ( even low fat is fine )
  • 1/3 cup lowfat milk or soy milk
  • 2 Tbs fresh chopped parsley
  • salt and pepper to taste

Directions
  1. Slices squash in even circles.
  2. Cover with water.
  3. bring to boil.
  4. Shut off heat and cover 5 minutes
  5. Drain well.
  6. Squash will be pewfectly tender.
  7. In a bowl mix toghether, mayo, olive oil, milk, garlic, parsley and salt and pepper.
  8. Blend well.
  9. Gently stir into hot drained squash
  10. Sprinkle with more fresh parsley if desired
