Grannys Cordon Blue Casserole

This recipe was in my local paper and sounded so good I wanted to share it.
Ingredients
- 4 strips bacon, diced shopping list
- 3 boneless chicken breast, diced shopping list
- 1 bell pepper, diced shopping list
- 1/4 cup diced pimento shopping list
- 1/2 cup diced onion shopping list
- 1 can chicken broth shopping list
- 1 cup milk shopping list
- 8 oz cream cheese shopping list
- 3 cups instant rice shopping list
- salt and papper, to taste shopping list
How to make it
- Preheat oven to 350 degrees
- In medium pot brown bacon till crisp, remove and drain.
- Add chicken and saute till lightly brown.
- Add bell pepper and onion, saute slightly.
- Add pimento, broth, milk, salt, pepper and bring to a boil.
- Add cream cheese, stir until melted.
- Add rice and bacon, remove from stove, and stir well.
- When stirring in rice, if it looks a little too dry you can add a little more milk.
- Pour into a large casserole dish, cover with foil or lid, and bake for 25 minutes.
- Remove from oven and let steam for 10 minutes before removing foil or lid.
- Add any extra vegetables you like for a different taste.
- Serve with a salad and bread for a good meal.
