Garden Pie

- 1 unbaked 9-inch pie crust. (or make your own) shopping list
- 1 cup mushrooms shopping list
- 5 Tbsp butter shopping list
- 1 garlic clove, pressed shopping list
- 1 cup chopped onions shopping list
- 1 cup finely shredded cabbage shopping list
- 1 cup sliced broccoli or cauliflower or both(Florets and stems) shopping list
- 1 cup chopped turnip or parsnip shopping list
- 1 pinch caraway seeds shopping list
- 2 sprigs basil, chopped shopping list
- 1 Tsp chopped dill shopping list
- 2 Tbsp whole wheat flour shopping list
- 2 Tbsp wine vinegar shopping list
- 2 eggs shopping list
- 1/2 cup cottage cheese shopping list
- 1/2/ cup cream cheese shopping list
How to make it
- Preheat oven to 350 degrees F
- Set Pie Crust aside.
- Separate mushroom stems from caps. Slice caps and put aside.
- Chop stems
- Melt 3 Tbsp butter in a skillet and saute the mushroom stems, garlic, onions, cabbage, broccoli/cauliflower,turnip until crisp.
- Stir in Caraway Seeds, ,basil, and dill
- Remove from heat.
- Sprinkle vegetables with the flour, mix well, then add vinegar and toss again
- Beat the eggs, then work in the cottage cheese and cream cheese.
- Stir in the vegetables.
- Melt the remaining butter in a skillet and saute the mushroom caps
- Spread the vegetable-cheese mixture in the pie shell.
- Top with the mushroom caps, then bake 35 to 40 minutes or until brown.
- Serve hot!
