Ingredients
  • 1 unbaked 9-inch pie crust. (or make your own)
  • 1 cup Mushrooms
  • 5 Tbsp Butter
  • 1 Garlic clove, pressed
  • 1 cup chopped Onions
  • 1 cup finely shredded cabbage
  • 1 cup sliced Broccoli or Cauliflower or both(Florets and stems)
  • 1 cup chopped Turnip or Parsnip
  • 1 pinch Caraway Seeds
  • 2 sprigs Basil, chopped
  • 1 Tsp chopped Dill
  • 2 Tbsp Whole Wheat Flour
  • 2 Tbsp Wine Vinegar
  • 2 Eggs
  • 1/2 cup Cottage Cheese
  • 1/2/ cup Cream Cheese

Directions
  1. Preheat oven to 350 degrees F
  2. Set Pie Crust aside.
  3. Separate mushroom stems from caps. Slice caps and put aside.
  4. Chop stems
  5. Melt 3 Tbsp butter in a skillet and saute the mushroom stems, garlic, onions, cabbage, broccoli/cauliflower,turnip until crisp.
  6. Stir in Caraway Seeds, ,basil, and dill
  7. Remove from heat.
  8. Sprinkle vegetables with the flour, mix well, then add vinegar and toss again
  9. Beat the eggs, then work in the cottage cheese and cream cheese.
  10. Stir in the vegetables.
  11. Melt the remaining butter in a skillet and saute the mushroom caps
  12. Spread the vegetable-cheese mixture in the pie shell.
  13. Top with the mushroom caps, then bake 35 to 40 minutes or until brown.
  14. Serve hot!

This sounds divine, it's the kind of pie I use to make actually!
It's the perfect thing to cook when I know I'll have a busy week and just have time for my own version of fast food! :)
