Ingredients
  • 1 lb. of lean ground chicken breast
  • 1/2 lg onion chopped
  • 2 cloves of garlic minced
  • 1 can (4.5 oz) chopped green chilies
  • 3 c. fat free /reduced sodium chicken broth ( I like College Inn)
  • 1 can of small white beans rinsed and drained
  • 1 pk. of McCormick White Chicken Chili Mix
  • 1 c. frozen baby white corn
  • salt and pepper to taste
  • 2 tblspns. of olive oil

Directions
  1. Sautee chopped onion in olive oil until tender about 5 minutes
  2. Add raw ground chicken and minced garlic.
  3. Add salt and pepper to taste.
  4. Cook unitl meat is no longer pink and broken up.
  5. Add can of green chilies, chicken broth, beans, chili mix, and frozen corn.
  6. Cook for another 35-40 min.
  7. Serve with sour cream, shredded cheese, tortilla chips and or corn bread.
  8. Enjoy!

This sounds so good! I have a chicken chili recipe also. Sometimes I'll make it once a week! I like the reduced fat/low sodium broth too.
