This recipe originated with the desire to use left over ingredients from a big Santa Maria BBQ (80 people). One left over was four fresh red bell peppers, another a jar of pesto sauce and the third was a full container of crumbled feta cheese.

I am definitely making this tonight. I have a case of red peppers and I just bought some hot Italian sausage today (I never eat ground beef). I always have Feta and the rest of the ingredients I can improvise. Great idea with the red peppers instead of green. I may even add some BHUT JOLOKIA!!! Thanks Cowboy!
