Cup-of-Joe Roast Beef Recipe
I was looking for something different to do with a roast. This made the most amazingly rich tasting gravy and tender flavorful roast.

Ingredients
  • 1 tablespoon oil
  • 2 1/2 pounds beef chuck roast
  • 1 medium onion, chopped
  • 1 cup brewed coffee, (I like it strong)
  • 3/4 cup beef stock
  • 2 teaspoons dried basil
  • 1 garlic clove or 1 tsp. garlic powder
  • 1 teaspoon salt, optional
  • 1/2 teaspoon pepper
  • 1/4 cup all-purpose flour
  • 1/2 cup water (or more beef stock, not hot)

Directions
  1. Heat oil in a heavy pan; brown roast on all sides. Remove the roast.
  2. Add onion and cook until transparent. Add coffee, 3/4 cup water, beef stock, basil, garlic, salt and pepper.
  3. Place roast back into pan.
  4. Cover and simmer for 2-1/2 hours or until meat is tender.
  5. Remove roast to serving plate and cover.
  6. Combine flour and 1/2 cup water until smooth; stir into pan juices. Slowly pour flour mixture into juices, whisking constantly. Cook and stir until thickened and bubbly.
  7. Slice roast and serve with gravy.
