Slow Cooker Roast Beef With Ginger Ale Recipe
Do the prep on this roast the night before and start it in the morning before work. Great to come home to! Recipe and photo from a Fix-IT-and-Forget -It book

Ingredients
  • 3 lb beef roast (eye round a good choice)
  • 1/2 c flour
  • 2 T vegetable oil
  • 1 oz envelope of dry onion soup mix
  • 1 envelope of dry brown gravy mix
  • 2 C ginger ale
  • Fresh thyme sprigs(optional)

Directions
  1. Coat the roast with flour
  2. Reserve any flour that doesn't stick to the roast
  3. Sear the roast on all sides in a large skillet over medium heat in the oil
  4. Place in slow cooker
  5. Combine dry soup mix, gravy mix, reserved flour and ginger ale in a bowl and whisk together until smooth
  6. Pour over roast (place in fridge until next day at this point, if you want)
  7. Cover and cook on low 8 to 10 hours or until roast is tender
  8. Serve with creamy mashed potatoes and your choice of a side
  9. Note: ideal size crockpot is 4 qt, larger may be used
