Bolo De Canela Com Mel - Cinnamon Sponge Cake With Honey Recipe
This is quite a traditional cake, particularly in the Soajo village, in the Peneda-Gerês National Park. Very easy to make, and easier still to eat!

Ingredients
  • 6 eggs
  • 4 tbsp sugar
  • 4 tbsp honey
  • 1 tbsp ground cinnamon
  • 10 tbsp self-raising flour
  • 2 tbsp olive oil (if you find the taste too over-powering use ordinary oil)
  • Honey to drizzle when serving

Directions
  1. Whisk the eggs and sugar until fluffy and doubled in volume.
  2. Add the oil, honey and the cinnamon.
  3. Whisk a couple of minutes more,
  4. One by one, add the spoons of flour whisking well between each addition.
  5. Pour into a 10 inch prepared baking tin, and bake at 170ºC for about 45 minutes.
  6. Check it is well baked, the way you usually do.
  7. When ready, let it cool for about 20 minutes and unmould onto a cake dish.
  8. Serve cold, drizzled with some more honey.
