The Best Banana Bread Recipe

Ingredients

1 1/2 cups flour

1/2 cup sugar

1 teaspoon salt

2 teaspoons baking powder

1/2 teaspoons baking soda

3/4 cup oatmeal

1/2 cup vegetable oil

2 eggs

1/3 cup buttermilk or sour milk (1/3 cup milk + 2 tablespoons lemon juice)

2/3 cup mashed bananas (approx. 3 bananas)

Directions

Grease a loaf pan and set aside. Pre-heat the oven to 350*F.

Sift together the dry ingredients.

Blend together the oil, eggs and buttermilk.

Stir together the wet and dry ingredients just until blended.

Fold in the bananas.

Pour into the loaf pan. Bake 50-60 minutes, or until test done with a toothpick.

Remove bread from the pan and allow to cool on a rack.

(It is most wonderful warm and with butter.)
