Ingredients
  • 1 C apple cider
  • 2 large Granny smith apples, peeled and cut into 8 wedges (about 14 ounces)
  • 1 ( 1 lb ) pork tenderloin. trimmed and cut crosswise into 8 (1/2" thick) slices
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Cooking spray
  • 1/2 C half and half
  • 1/2 tsp dried rosemary
  • Chopped fresh parsley (optional)

Directions
  1. Pour cider into large non-stick skillet; bring to a boil
  2. Add apples and reduce heat
  3. Simmer for 5 minutes or until apples are barely tender
  4. Remove apples from pan with a slotted spoon and place in a medium bowl
  5. Cook cider over low heat until reduced to 1/2 cup (about 3 minutes)
  6. Pour reduced cider over apples and set aside
  7. Sprinkle pork evenly with salt and pepper
  8. Wipe pan clean with paper towel
  9. Heat pan over medium high heat
  10. Coat pan with cooking spray
  11. Add pork to pan and cook 3 minutes on each side or until browned
  12. Remove from heat
  13. Add apple mixture, half and half and rosemary to the pan
  14. Garnish with fresh parsley, if desired
  15. Serving: 2 medallions, 4 apple wedges and about 1/4 cup sauce
