Arroz Doce - Rice Pudding Recipe
Arroz Doce is served particularly at Christmas time. Every region in the country has a version, some with some without eggs. The northern version, in my oppinion is much richer.

Ingredients
  • 1 cup starchy rice (like risotto rice)
  • 2 cups water
  • grated zest of 1 lemon
  • 1 litre full fat milk (or 0.8 of a litre of milk + 0.2 litre carton thick cream)
  • 6 egg yolks
  • 10 tbsp sugar
  • 1 cinnamon stick
  • Ground cinnamon

Directions
  1. Cook the rice with the water and cinnamon stick for about 10 minutes, or until the water has been absorbed.
  2. Remove the cinnamon stick.
  3. Whisk the egg yolks with the milk (or milk and cream), the sugar and lemon zest.
  4. Add to the rice and let it cook for about 10 minutes more, in low heat.
  5. It should be creamy but runny.
  6. Pour ino a large serving dish, or individual ones.
  7. Sprinkle/decorate with ground cinnamon.
  8. Serve cold.
