Lemon Shortbread

- 2 cups flour shopping list
- 1 cup cornstarch shopping list
- 1 cup powdered sugar shopping list
- 1/4 cup grated lemon zest shopping list
- 1 1/2 cups butter; softened shopping list
- colored sugars; optional shopping list
How to make it
- Combine flour, corn starch, powdered sugar and lemon rind in a large bowl.
- With a large spoon, blend in butter, or blend in using electric mixer until a soft, smooth dough forms.
- Roll dough to 1/4" thickness.
- Cut into shapes with cookie cutters.
- Place on ungreased cookie sheets.
- Sprinkle with colored sugar.
- Bake at 300F for 15-20 minutes or until edges are lightly browned.
- Remove from sheet; cool completely.
- Makes about 4 dozen 2 1/2" cookies.
