Loaded Hashbrown Omelette

- frozen hash brown potatoes (2 servings) shopping list
- 1/2 to 3/4 cup grated cheddar cheese shopping list
- 1/4 to 1/2 cup sour cream shopping list
- 6 tablespoons chopped bacon or bacon bits shopping list
- salt & pepper, to taste shopping list
- diced green onions shopping list
How to make it
- In a large skillet, heat oil and fry hasbrowns. One side of the pan should be thicker in hashbrowns then the other.
- When the thinner side is done, spread cheese, bacon and then sour cream on the thicker half, like an omelette. Fold in half.
- Cover and reduce heat, cooking until cheese is melted.
- Garish with diced green onions (and more bacon if you'd like). Cut in half, serves 2.
