How to make it

  • In a large skillet, heat oil and fry hasbrowns. One side of the pan should be thicker in hashbrowns then the other.
  • When the thinner side is done, spread cheese, bacon and then sour cream on the thicker half, like an omelette. Fold in half.
  • Cover and reduce heat, cooking until cheese is melted.
  • Garish with diced green onions (and more bacon if you'd like). Cut in half, serves 2.

    babskitchen ate it and said...
    My husband made these this weekend. Really good. He changed it just a little, adding a beaten egg on top of the hashbrowns to bind it a little better (it was wanting to fall apart on him), sauteed onion, green pepper and mushroom, cooked and crumbled bacon, put it all in with the cheese, and then topped it with the sour cream. Really good, we will make it again!

    Never thought of subbing browns for eggs in an omelet! Great idea - my hubby love hashbrowns and hates eggs, so this would be the omelet for him! Thanks!
