Ingredients
  • 1 cup cooked whole wheat cous cous - prepared according to package directions
  • 1 can black beans- rinsed
  • 1/4 of a red onion - chopped
  • 1/2 large carrot - chopped
  • 1 fresh jalapeno - membrane and seeds removed, minced
  • cilantro (coriander) about 1/4 cup- roughly chopped
  • juice of one lime
  • 1/4 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp onion salt
  • salt-just a sprinkle
  • * all spices are to taste- use more or less according to your personal preference

Directions
  1. Toss beans, onions, carrot, jalapeno and cilantro in a medium sized bowl.
  2. Add cous cous, lime juice and toss well.
  3. Begin adding spices, tasting as you go to be sure you have it adjusted according to your taste.
  4. Enjoy!
