Amendoas Da Quinta Da Foz - Quinta Da Foz Almonds Recipe
Quinta da Foz is a Port Wine Estate I used to visit with my groups when I was a tour guide. At the tasting-sessions, they used to bring these almonds, and they disappeared in a flash! Guess who was the culprit!

Ingredients
  • 2 cups shelled and peeled almonds
  • 1 tbsp butter
  • Salt and pepper

Directions
  1. Dry-fry the almonds for a couple of minutes shaking the pan continuously, so that the almonds don't burn.
  2. Add the butter and coat the almonds, still in the pan.
  3. Season with salt and pepper.
  4. Lightly fry until slightly golden.
  5. Scatter them onto paper towel and sprinkle with more salt and pepper.
  6. Serve cold.
  7. They go extremely well with a cold beer or a nice glass of Port (what else?)

These sound savory and delicious, I'll be making some very soon... (I normally roast almonds plain in the oven, so this sounds like a great way to make them without turning on the oven - especially during hot months!)
