Florentine Ravioli

- Fresh pasta shopping list
- * 3 1/2 cups all purpose flour shopping list
- * 4 eggs, room temperature shopping list
- * 1 tsp. salt shopping list

- * 1 cup ricotta cheese shopping list
- * 1/2 cup grated parmesan cheese shopping list
- * 5 oz. boursin cheese shopping list
- * 1/4 cup feta cheese shopping list
- * 1/2 cup asiago cheese, shredded shopping list
- * 1 cup fresh spinach, shredded shopping list
- * 2 Tbsp fresh basil, shredded shopping list
- * 2 Tbsp garlic, minced shopping list
- * 4 Tbsp sundried tomatoes, minced shopping list
- Place flour in a heaping mound on a wood cutting board. Using your hand, make a well in the middle of the flour. Place eggs and salt in the middle of this flour well. Usign a fork, stir ingredients well. Knead dough for 15 minutes, and then wrap the dough in plastic and let it rest for 30 minutes at room temperature. shopping list
- Using a pasta maker, run the pasta through the machine at setting number one. Do a book fold with the pasta and repeat it through the pasta maker. Repeat this action 3 more times, each time reducing the setting by one notch, until pasta has reached your desired thickness. Cover pasta and set it aside. shopping list
- Combine all mixture ingredients in a large mixing bowl. Place fresh pasta sheets in ravioli press. Place 1 tsp. of mixture into each mold, then use an egg wash to seal the pasta sheets. shopping list
- Place ravioli in boiling water for 2-3 minutes. Serve with sauce immediately. shopping list
