White Chocolate Mud Cake Recipe
I love white chocolate. Can't remember who gave me this recipe, but at my house, this cake is a winner.

Ingredients
  • 250 grs butter
  • 150 grs white chocolate, chopped coarsely
  • 2 cups caster sugar
  • 1 cup milk
  • 2 cups self-raising flour
  • 1 tsp vanilla essence
  • 2 eggs lightly beaten
  • *****
  • For the white chocolate ganache:
  • 1/2 cup cream
  • 300 grs white chocolate, chopped coarsely

Directions
  1. Grease a deep 20 cm-round cake pan.
  2. Line base and side with baking paper.
  3. Combine butter, chocolate, sugar and milk in medium saucepan.
  4. Stir over low heat, WITHOUT BOILING, until smooth.
  5. transfer mixture to a large bowl.
  6. Cool 15 minutes.
  7. Pre-heat oven to mederately slow.
  8. Whisk flower into mixture, together with vanilla and eggs.
  9. Pour mixture into prepared pan.
  10. Cover pan with foil.
  11. Bake for 45 minutes.
  12. Remove foil and bake further 15 minutes.
  13. Stand cake in pan for 30 minutes.
  14. Turn onto wire rack to cool.
  15. Spread top and side of cold cake with white chocolate ganache.

  17. White chocolate ganache:
  18. Bring cream to a boil in small saucepan. Pour over chocolate in small bowl, stirring until chocolate melts.
  19. Cover.
  20. Refrigetate, stitting occasionally, about 30 minutes or until speadable.

That was really nice. I loved it and I can immagine how it looks with some plain chocolate as decoration.
