White Chocolate Mud Cake

- 250 grs butter shopping list
- 150 grs white chocolate, chopped coarsely shopping list
- 2 cups caster sugar shopping list
- 1 cup milk shopping list
- 2 cups self-raising flour shopping list
- 1 tsp vanilla essence shopping list
- 2 eggs lightly beaten shopping list

- For the white chocolate ganache: shopping list
- 1/2 cup cream shopping list
- 300 grs white chocolate, chopped coarsely shopping list
How to make it
- Grease a deep 20 cm-round cake pan.
- Line base and side with baking paper.
- Combine butter, chocolate, sugar and milk in medium saucepan.
- Stir over low heat, WITHOUT BOILING, until smooth.
- transfer mixture to a large bowl.
- Cool 15 minutes.
- Pre-heat oven to mederately slow.
- Whisk flower into mixture, together with vanilla and eggs.
- Pour mixture into prepared pan.
- Cover pan with foil.
- Bake for 45 minutes.
- Remove foil and bake further 15 minutes.
- Stand cake in pan for 30 minutes.
- Turn onto wire rack to cool.
- Spread top and side of cold cake with white chocolate ganache.

- White chocolate ganache:
- Bring cream to a boil in small saucepan. Pour over chocolate in small bowl, stirring until chocolate melts.
- Cover.
- Refrigetate, stitting occasionally, about 30 minutes or until speadable.
