Spanish Chicken Bake Recipe
Nice spanish style chicken dish.Easy to put together and delicious.

Ingredients
  • 11/3c water
  • 1(41/2oz) pkg. spanish rice mix
  • 1(2oz)can mushroom stems and pieces
  • 1/2 of 4oz. can diced green chilies(about 1/4c)
  • 4 boned,skinless chicken breast halves
  • 1/4c finely shreaded cheddar cheese

Directions
  1. Preheat oven to 350. Meanwhile bring water to boiling. In a 10x6x2" baking dishcombine boiling water and rice mix. Drain mushrooms.
  2. Stir mushrooms and chilies into rice mixture. Place chicken breasts on top of the rice mixture. Cover tightly with foil.
  3. Bake 35-40 mins or till rice and chicken are tender and chicken no longer pink. Sprinkle with cheese. Bake uncovered for 2-3 mins. more or till cheese is melted.

I like the ease of this recipe pleclare - with a gentle kick to boot (since its the official start of football)im saving to try...but got my fiver in since I know it is a winner for sure! (not like my giants or jets...lol)

in fact today, I will start printing out some recipes I have saved - so they are handy the next time I cook up a meal... :-)

This sounds so easy! It doesn't say what to do with the chicken breasts. Do we put it in with the cooked rice and bake everything together?
