Spicy Fried Catfish with tartar Sauce

- 4-6 medium catfish fillets shopping list
- 1 1/2 cups plain cornmeal-yellow or white shopping list
- 1/2 cup all purpose flour shopping list
- 2 teaspoons salt-or to taste shopping list
- 1 teaspoon ground black pepper-or to taste shopping list
- 1 teaspoon garlic powder-or to taste shopping list
- 1 1/2 teaspoons cayenne pepper-or to taste shopping list
- 2 cups buttermilk shopping list
- 1 tablespoon hot sauce shopping list
- oil-peanut,vegetable,corn,or canola shopping list
- Tartar Sauce: shopping list
- 1 cup mayonaise shopping list
- 1/4 cup grated sweet onion shopping list
- 1 clove minced fresh garlic or 1 teaspoon granulated garlic shopping list
- 1/3 cup chopped sweet pickles shopping list
- 1 tablespoon lemon juice shopping list
- salt to taste shopping list
How to make it
- Rinse fillets and pat dry.
- In a shallow dish combine cormeal,flour,and seasonings. Mix well.
- In a wide medium bowl,combine buttermilk and hot sauce.
- Heat 1/2" to 1" of oil in a large cast iron skillet over medium heat until it reaches 350 degrees.
- Dip each fillet in buttermilk mixture then dredge in cormeal mixture.
- Fry fish for 5-7 minutes on both sides or until golden brown and flakes easily with fork.
- Drain on paper towels.
- Serve with tartar sauce on the side along with french fries,hushpuppies, and cole slaw.
- Tartar Sauce:
- Mix all ingredients together in a small bowl.
- Cover and refrigerate at least one hour before serving.
