Spicy Fried Catfish With Tartar Sauce Recipe
I choked on too many fishbones as a child so I don't like "bone-in" fish. I came up with this recipe so I wouldn't have to give up fish altogether.

Ingredients
  • 4-6 medium catfish fillets
  • 1 1/2 cups plain cornmeal-yellow or white
  • 1/2 cup all purpose flour
  • 2 teaspoons salt-or to taste
  • 1 teaspoon ground black pepper-or to taste
  • 1 teaspoon garlic powder-or to taste
  • 1 1/2 teaspoons cayenne pepper-or to taste
  • 2 cups buttermilk
  • 1 tablespoon hot sauce
  • oil-peanut,vegetable,corn,or canola
  • Tartar Sauce:
  • 1 cup mayonaise
  • 1/4 cup grated sweet onion
  • 1 clove minced fresh garlic or 1 teaspoon granulated garlic
  • 1/3 cup chopped sweet pickles
  • 1 tablespoon lemon juice
  • salt to taste

Directions
  1. Rinse fillets and pat dry.
  2. In a shallow dish combine cormeal,flour,and seasonings. Mix well.
  3. In a wide medium bowl,combine buttermilk and hot sauce.
  4. Heat 1/2" to 1" of oil in a large cast iron skillet over medium heat until it reaches 350 degrees.
  5. Dip each fillet in buttermilk mixture then dredge in cormeal mixture.
  6. Fry fish for 5-7 minutes on both sides or until golden brown and flakes easily with fork.
  7. Drain on paper towels.
  8. Serve with tartar sauce on the side along with french fries,hushpuppies, and cole slaw.
  9. Tartar Sauce:
  10. Mix all ingredients together in a small bowl.
  11. Cover and refrigerate at least one hour before serving.

Haven't had a mess of catfish in a bit. Will give this a shot. Sounds pretty darn good. Five (I liked the homemade Tartar Sauce too)
