How to make it

  • Rinse fillets and pat dry.
  • In a shallow dish combine cormeal,flour,and seasonings. Mix well.
  • In a wide medium bowl,combine buttermilk and hot sauce.
  • Heat 1/2" to 1" of oil in a large cast iron skillet over medium heat until it reaches 350 degrees.
  • Dip each fillet in buttermilk mixture then dredge in cormeal mixture.
  • Fry fish for 5-7 minutes on both sides or until golden brown and flakes easily with fork.
  • Drain on paper towels.
  • Serve with tartar sauce on the side along with french fries,hushpuppies, and cole slaw.
  • Tartar Sauce:
  • Mix all ingredients together in a small bowl.
  • Cover and refrigerate at least one hour before serving.

    Haven't had a mess of catfish in a bit. Will give this a shot. Sounds pretty darn good. Five (I liked the homemade Tartar Sauce too)
