Sopapillas is a kind of fried pastry; a flat bread that is easy to prepare, and is usually served with something sweet to put on top, like honey or cinnamon-sugar.

Ingredients
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons shortening
  • 1 1/2 cups warm water
  • 2 quarts oil for frying

Directions
  1. In a large bowl, stir together flour, baking powder, salt and shortening. Stir in water; mix until dough is smooth. Cover and let stand for 20 minutes.
  2. Roll out on floured board until 1/8 to 1/4 inch thick. Cut into 3 inch squares. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  3. Fry until golden brown on both sides. Drain on paper towels and serve hot.
  4. Note: I've served these with powdered sugar when hot....oh so good!

These are so good. I ate these first when I lived in Albuquerque, New Mexico. There was a restaurant called La Hacienda in the old part of Albuquerque. They had the best Mexican food ever & they served these. That's a restaurant I will never forget because the food was incredible. That was back in 1963 & fresh from England. Quite an experience for an English girl. First hot, spicy food I had ever eaten. I love it still.
