Grandma Hazels Carrot Bread Recipe
This is an old recipe from my grandmother. I remember making it as a kid and entering it in the fair - I won several blue ribbons with this moist bread.

Ingredients
  • 3 eggs; beaten
  • 1 1/2 cups oil
  • 2 cups sugar
  • 2 cups carrots; grated
  • 8 ounces crushed pineapple in juice; undrained
  • 1 cup walnuts; chopped
  • 3 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon

Directions
  1. Mix all ingredients together until moistened.
  2. Pour batter into 2 greased and floured 9 x 5-inch loaf pans.
  3. Bake at 325 degrees for one hour, turn off oven and leave in oven with door closed for an additional 10 minutes.
  4. Remove from pans and cool on wire racks.
  5. Makes 2 loaves.
