LINGUINI WITH VODKA AND ROSY TOMATO SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Faulkner Estate in Richardson, Texas in 1988.

Ingredients
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1 small white onion chopped
  • 1 clove garlic minced
  • 28 ounce can chunky tomato sauce
  • 1 tablespoon fresh basil minced
  • 1/8 teaspoon dried pepper flakes
  • 1/2 cup vodka
  • 1/2 cup heavy cream
  • 3 tablespoons parmigiano reggiano grated
  • 12 ounce linguini
  • 1 teaspoon freshly ground black pepper
  • Chopped cilantro

Directions
  1. Combine oil and butter in a medium skillet and sauté the onion for about 5 minutes.
  2. And garlic and sauté for one additional minute.
  3. Add all other ingredients except cream and pasta.
  4. After simmering for about 15 minutes add cream and reduce heat to keep it hot but not boiling.
  5. Cook pasta according to package directions and drain well.
  6. Spread a layer of sauce on a heated serving platter then pile on the pasta and top with the remaining sauce and garnish with chopped cilantro.
