Lemon Linguini Parmesan Recipe
LEMON LINGUINE PARMESAN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stinson Estate in Fort Worth, Texas in 1992.

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves minced
  • 1/2 cup evaporated milk
  • 3/4 pound whole grain linguini
  • 1/2 cup fresh lemon juice
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup fresh parsley minced
  • 3 teaspoons freshly ground black pepper

Directions
  1. Heat oil in small skillet and sauté garlic for 1 minute then add milk and heat gently.
  2. Cook pasta until all dente then drain and toss well with lemon juice.
  3. Pour garlic mixture over pasta and toss.
  4. Add parmesan cheese, parsley and pepper then toss well again and serve immediately.
