I got this recipe from The Pioneer Woman, and it was a HUGE hit. Nothing could be easier!

Ingredients
  • 6-7 pound pork shoulder
  • 1 onion, quartered
  • 1 tsp. chili powder
  • 1/4 cup brown sugar
  • 3-4 garlic cloves
  • 1 tsp. dried oregano
  • 1 tsp. ground cumin
  • 1-2 tbsp salt
  • pepper
  • 1-2 tbsp olive oil
  • 2-3 tbsp white wine vinegar

Directions
  1. Start by making the rub. Throw everything but the pork into the food processor and combine. It comes out a rather alarming flamethrower-red.
  2. Cover the whole pork shoulder with the rub....get it everywhere!
  3. Place the pork on a roasting pan and add 2 cups of water. I sat mine up on an inverted saucer so it wouldn't be swimming.
  4. Roast at 300 degrees, with the lid on, for about 6-7 hours. The directions said to turn once an hour. I did it but not sure it's necessary to do it THAT often.
  5. When it's done, open the lid, turn the pork skin side up, and stick it back in there to get it crispy.
  6. Let it cool off a bit, then shred it to pieces with two forks.
  7. We loved it with the lime wedges and sour cream and tortillas. It's also great served over rice with some of the drippings!
