Smoked Sausage Cheddar Beer Dip

- 2 Tablespoons unsalted butter shopping list
- 1/2 finely chopped green onion shopping list
- 1 pound smoked sausage, diced (Bryan or your favorite brand) shopping list
- 2 Tablespoons Dijon mustard shopping list
- 1 8-ounce package cream cheese shopping list
- 1 12-ounce bottle dark beer shopping list
- 1 pound shredded sharp white cheddar cheese shopping list
- 1/2 teaspoon ground cayenne pepper shopping list
How to make it
- Melt the butter in a medium-size saucepan over medium-high heat. Add the onion, and saute for 2 minutes. Add the sausage and cook until it is no longer pink in color and is cooked through - approximately 8 to 10 minutes. Drain off fat. Add the mustard, cream cheese, and beer, stirring until the cream cheese is melted. Remove from the heat and stir in the cheddar cheese, a little at a time, until melted. Add the cayenne pepper. May serve in a dip bowl or bread bowl with crackers or bread crumbs for dipping.
- To prepare ahead, make dip and place in a 1 quart baking dish that has been sprayed with nonstick cooking spray. Then refrigerate for up to 3 days. When ready to use, bring the dip to room temperature. Bake in 350* oven for 20-25 minutes. Serve warm.
