Ingredients
- 1 large salmon cleaned and skinned - you can also use salmon steaks - about 1.5kg
- salt - lots!
- 200g cornmeal
- 6 spoons butter
- 3 spoons oil (sunflower)
- 5-6 garlic cloves (if you have spring green garlic, this would be the best! - use 7 -8 pieces!) diced
- 1 cup of diced parsley
- 1 cup sourcream
- White, crusty bread - potato bread would work the best, actually.
Directions
- Clean the fish and dry it with paper towel. Rub it well with salt.
- Dredge the fish through cornmeal to cover it well.
- In a pan, heat the butter and oil and fry the fish covered with a lid until it changes color and looks done (about 10 - 15 min.) Arrange it on a plate.
- Heat the sourcream at low heat for 2 - 3 min and add the diced garlic and parsley. Pour it over the fish. Eat it with bread.
- Serve it with a glass of Sauvignon!

I love salmon and we buy it about twice a month. This is another heavenly sounding recipe that I will definitely try. I can imagine the pan drippings from the fish mixing with the sour cream and garlic. Sounds divine!
