How to make it

  • Combine flour, oats, brown sugar, cinnamon, and butter; blend well.
  • Pat half of crumb mixture into a 9-inch baking pan; cover with rhubarb.
  • Combine sugar and cornstarch; slowly add water, blending well.
  • Cook over low heat, stirring constantly, until smooth and slightly thickened.
  • Stir in vanilla.
  • Pour sauce over rhubarb, and sprinkle with remaming crumbs.
  • Bake at 350 degrees for 40 minutes or until rhubarb is tender.
  • Serve warm with ice cream.
  • Yield: 6 to 8 servings.

    This sounds so yummy. Will keep this recipe tucked away until the rhubarb returns. Or maybe I can find some in the freezer section?

    Alas, no rhubarb came to our south Tx grocery store this year, and I am pining for rhubarb. I guess I'll enjoy vicariously. Thanks for the vicarious joy, LOL.
