Orange Chicken Thighs Recipe
ORANGE CHICKEN THIGHS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marlin Estate in Heath, Texas in 1998.

Ingredients
  • 2 pounds chicken thighs
  • 1 teaspoon grated orange zest
  • 1/2 cup fresh orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon vinegar
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 1/4 cup dry red wine

Directions
  1. Combine orange zest, juice, soy sauce, honey, vinegar, red pepper flakes, salt and pepper.
  2. Add chicken and turn to coat all over with marinade then cover and chill overnight.
  3. Remove chicken from marinade then pat dry.
  4. Heat vegetable oil in a large heavy skillet over medium heat for 1 minute.
  5. Add chicken and cook on both sides until brown about 5 minutes each.
  6. Cover then reduce heat to low and cook 20 minutes then remove from pan and keep warm.
  7. Add wine to pan and stir loosening any bits of chicken or brown glaze stuck to bottom of pan.
  8. Add reserved marinade and bring to a boil.
  9. Pour any juices that have accumulated around thighs into skillet.
  10. Boil until thickened then serve as a sauce over thighs.
