Baked Pork Chops And Mushrooms Recipe
BAKED PORK CHOPS AND MUSHROOMS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marlin Estate in Heath, Texas in 1998.

Ingredients
  • 6 lean pork tenderloin chops
  • 1 teaspoon vegetable oil
  • 2 cups fresh mushrooms sliced
  • 1 cup chicken broth
  • 5 teaspoons cornstarch
  • 1/4 teaspoon dried tarragon crushed
  • 2 ounces processed Swiss cheese
  • 3 cups rice cooked

Directions
  1. In large skillet which has been preheated sear both sides of pork chops quickly to seal in juices.
  2. Grease bottom of square baking dish with vegetable oil and place pork chops in bottom of pan.
  3. Cover pork chops with sliced mushrooms and set aside.
  4. In a 2 cup microwave safe measuring cup combine broth, cornstarch and tarragon.
  5. Microwave broth mixture on high for 4 minutes stirring twice until thickened and bubbly.
  6. Stir in cheese until melted then pour broth mixture over mushrooms and pork chops.
  7. Bake loosely covered with foil for 25 minutes at 350.
