Suzannes Spinach Recipe
Easy. Delicious. Frozen cooked spinach is mixed with butter, cream cheese, green onions, placed in a casserole, and topped with seasoned, buttered croutons, then sprinkled with cayenne. Serves 12-16.

Ingredients
  • 6 packages frozen chopped spinach, cooked as directed
  • 3 packages (3 ounce) cream cheese
  • 3 sticks unsalted butter
  • 4 green onions, chopped
  • Seasoned croutons, home-made or cook's choice

Directions
  1. Drain spinach well after cooked
  2. While spinach is draining, soften cream cheese and 1-1/2 sticks of the butter over low heat
  3. In bowl, mix spinach, cream cheese, and butter
  4. Stir in chopped green onions
  5. Mix well
  6. Spread into a lightly greased 9 X 13 casserole dish
  7. Melt remaining stick and half of butter
  8. Generously cover with *crushed* croutons
  9. Drizzle melted butter over all
  10. Sprinkle with cayenne pepper, optional
  11. Bake for 20-30 minutes in a 300 degree oven
  12. May add water chesnuts, pimiento, roasted chopped red pappers, Parmesan cheese
  13. THIS RECIPE WILL SERVE 12-16 AND IS SO VERSATILE
