Szechuan Braised Meatballs Recipe
I am always looking for quick and easy meals...this one is extra fast if you happen to have the meatballs allready prepared in the freezer

Ingredients
  • 1lb lean ground beef
  • 1 5-6oz can water chestnuts, rinsed and finely chopped
  • 2tsp+1T cornstarch, divided
  • 1/2tsp 5 spice powder
  • 1/4tsp salt
  • 1c salt reduced beef broth
  • 4tsp canola oil
  • 2 garlic cloves, minced
  • crushed red pepper to taste
  • 1/4c szechuan sauce
  • 4c shredded napa(chinese) cabbage
  • 1 15oz. can straw mushrooms, rinsed
  • 2 green onions sliced

Directions
  1. Mix beef, chestnuts, 2tsp cornstarch, 5 spice and salt. Shape into 12 balls
  2. Whisk broth and remaining cornstarchin a small bowl
  3. Heat 2tsp oil in pan and brown meatballs. Transfer to plate.
  4. Add remaining oil to pan; add the garlic and pepper, cook until fragrant. Add reserved broth mixture, Szechuan sauce, cabbage and mushrooms; cook until cabbage is just wilted.
  5. Reduce heat to simmer, add meatballs, cover and cook until sauce is thickened and meatballs are fully cooked.
  6. Sprinkle with green onions.
  7. Serve with rice.
