How to make it

  • Slice the onions very finely and cook them in the olive oil, until soft.
  • Do not let them brown.
  • Drain them completely.
  • Line a tart dish with the pastry, and line again with foil.
  • Bake blind for about 10 minutes in a pre-hated moderate oven.
  • Remove the foil. and bake for a further 5 minutes.
  • Whisk the eggs, and add to the onions, together with the cream and seasoning.
  • Fill the tart.
  • Arrange the anchovies on top, and bake for about 30 minutes.
