Onion And Anchovies Tart Recipe
This savoury tart is lovely served as a light lunch with some salad, or even at a picnic - if it arrives there! I hate making pastry - so I cheat and buy frozen....

Ingredients
  • 1 tart case, about 8 inces in diametre.
  • 1 kilo onions
  • 6 tbsp olive oil
  • 0.1 litre cooking cream
  • 3 eggs
  • Salt and pepper
  • 12 anchovie fillets

Directions
  1. Slice the onions very finely and cook them in the olive oil, until soft.
  2. Do not let them brown.
  3. Drain them completely.
  4. Line a tart dish with the pastry, and line again with foil.
  5. Bake blind for about 10 minutes in a pre-hated moderate oven.
  6. Remove the foil. and bake for a further 5 minutes.
  7. Whisk the eggs, and add to the onions, together with the cream and seasoning.
  8. Fill the tart.
  9. Arrange the anchovies on top, and bake for about 30 minutes.
