Super Nachos

- 1 pound chorizo casings removed shopping list
- 2 teaspoons chili powder shopping list
- 2 teaspoons cumin shopping list
- Pinch of salt shopping list
- 1-2 small cans refried beans or bean dip-warmed shopping list
- 1 12-ounce bag corn tortilla chips I use the assorted shopping list
- 1 1/4 pounds Monterey Jack grated with or without jalapenos peppers shopping list
- 2 cans of jalapeno pepper rings drained thoroughly shopping list
- 1 large onion, chopped shopping list
- 2 tomatoes, chopped shopping list
- 1 6-ounce can black olives, chopped shopping list
How to make it
- Brown the sausage in a medium skillet. Drain. When cool enough to handle, put in food processor and pulse to a fine consistency. Return to pan. Add the chili powder, cumin and salt. Rewarm and set aside.
- Spread a thin layer of refried beans or bean dip over the bottom of a platter or shallow, heat-proof bowl .
- Then spread a layer of chips over the beans, top with a layer of cheese, sausage, onion, tomato, peppers and olives. Repeat until all the ingredients are used. I try to get 4 layers.
- Bake at 375° for 15 minutes. Serve warm with sour cream and Guacamole Dip, if desired.
