Super Nachos Recipe

Ingredients

1 pound chorizo casings removed

2 teaspoons chili powder

2 teaspoons cumin

Pinch of salt

1-2 small cans refried beans or bean dip-warmed

1 12-ounce bag corn tortilla chips I use the assorted

1 1/4 pounds Monterey Jack grated with or without jalapenos peppers

2 cans of jalapeno pepper rings drained thoroughly

1 large onion, chopped

2 tomatoes, chopped

1 6-ounce can black olives, chopped

Directions

Brown the sausage in a medium skillet. Drain. When cool enough to handle, put in food processor and pulse to a fine consistency. Return to pan. Add the chili powder, cumin and salt. Rewarm and set aside.

Spread a thin layer of refried beans or bean dip over the bottom of a platter or shallow, heat-proof bowl .

Then spread a layer of chips over the beans, top with a layer of cheese, sausage, onion, tomato, peppers and olives. Repeat until all the ingredients are used. I try to get 4 layers.

Bake at 375° for 15 minutes. Serve warm with sour cream and Guacamole Dip, if desired.
